Pumpkin Semolina Dessert | vegan

Last Christmas i made very delicious pumpkin jam as presents for my family and everyone loved it. So as we all were very impressed about a sweet pumpkin product i decided to try something similar again. This is why i created this easy semolina dessert.

Takes ~45minutes
You need
- 500g butternut pumpkin
- 100-200ml water
- 5tbsp semolina
- lemon zest and juice of 1/2 lemon
- 3tbsp coconut blossom sugar (or just normal sugar)
- 1/2 tsp cinnamon
- 1/2 tsp chopped ginger
- 250g soy yoghurt
- 1tsp pure vanilla extract
- cocoa nibs for decoration

First peel and cut the pumpkin, remove the seeds, than boil it for about 20 minutes with the water until the pumpkin is soft. Use a manual mixer to puree. Add the semolina, let it boil for 1 minute, than cool down a bit. Now you can put in the sugar, lemon zest and juice, cinnamon and the ginger. In a separate bowl stir vanilla extract into soy yoghurt. In another bowl mix some of the pumpkin semolina pudding and some of the yoghurt. Layer everything in glasses (i used jam jars) and top it with cocoa nibs or any other decoration you like.
This dessert looks very good, is extraordinary but still super easy to make, perfect for a dinner night, to impress others. I like to put desserts in jar glasses, so if you have something leftover it´s easy to store and a great takeaway snack. I hope you enjoyed this recipe! Bon Appetite.
