At my cousins wedding i was the only vegan invited. Luckily the afternoon coffee was organised by relatives and friends so i got a chance to proove how delicious vegan desserts can be. Me and a very dear friend spent hours to create the recipe and are so proud of the result. Just try it! You won´t regret.

For the cakes 450ml soymilk 2 tsp apple cider vinegar 4 tsp pure vanilla extract 150ml oil 320g sugar 360g flour 50g cocoa powder 5 tbsp instant coffee 1 tsp baking powder 1 ½ tsp baking soda ½ tsp salt
Frosting 4 tbsp brown sugar ¼ cups flour 2 tbsp amaretto 2 tbsp coconut oil
pistacchios for decoration
Preheat the oven at 180°C. First mix all liquid ingredients and let sit for 5 minutes. Add dry ingredients and fill the dough in your muffin baking dishes. 3/4 should be enough as it will rise during the baking process. Bake for about 20 minutes. Let the cakes cool down before you add the frosting. Enjoy!
