Chocolate Chip Pancakes | vegan

What do you need for a perfect sunday morning? right - pancakes! After a long time i decided to have them again today. The only thing better than having pancakes on Sunday morning is having them with a person you love so i enjoyed making and eating these delicious beauties with my very best friend Chiara.

You need
- 200g flour
- 1 tsp baking soda
- 75g sugar
- 300ml soy milk
- 2 tbsp soy flour
- 1 tbsp vanilla extract
- 50g chocolate chips
- some oil for the pan
Serve with
- maple sirup, jam or ice cream
- fresh fruits and nuts

Mix all the ingredients except the chocolate chips together. Then stir in the chocolate chips. Heat up some oil in a pan, where you bake the pancakes. It takes about 30 seconds per side for the dough to get the ideal colour. You can keep them warm in the oven at 60°C.
The chocolate chips are not necessary. You can make normal pancakes without them and chocolate pancakes if you replace them with cocoa powder. You can also serve it with soy yoghurt, peanut butter or chocolate spread. There are so many options, you can be as creative as you like.
