Spicy Veggie Couscous | vegan

One of my absolutely favourite grains is couscous, because it is so easy to prepare. Just perfect if you don´t have much time for cooking (or if you have a lazy day).
For 4 people you need
1 onion
1 zucchini/courgette
1 eggplant
1 red pepper
1 can chickpeas
500g couscous
1 glas (350g) ajvar
Cut the onion and fry it, then put in the chickpeas for a wee while. Also cut the courgette, eggplant and red pepper and add it. Pour in the Ajvar and let everything simmer for about 10 minutes. During this time boil 1/2l water, pour it over the couscous and let it soak for 5 minutes (or as it says on the package). When your veggies are ready, just mix it with the couscous. Bon Appetite!
