Nut Corners | vegan

Oh my god. I can´t think of a christmas without these delicious nut corners. They became my favourite this year, i can´t get enough. But try yourself!

Ingredients for the base

225g flour

75g corn starch

1 tsp baking powder

125g sugar

1 tbsp vanilla extract

2 tbsp soy flour

2 tbsp water

125g vegan butter

Ingredients for the topping

100g apricot jam

200g vegan butter

200g sugar

1 tbsp vanilla extract

300g ground hazelnuts

100g chopped hazelnuts

vegan chocolate

Preheat the oven at 175° Celsius. Knead all the ingredients for the base to a dough and roll it on a baking sheet covered with baking paper. Now spread the apricot jam on the base. Melt the vegan butter and the sugar in a pot, than add the hazelnuts and stir. Put the mixture on top of the dough and jam. After baking for about 45 minutes let it cool completely, than cut it into triangles. Heat the chocolate in a bain-marie and cover the corners of your cookies. Enjoy!
