Green Detox Soup | Souptember | vegan

Tired, bad skin and headaches. Sometimes the body is completely stressed out and needs a restart. Nutritions and liquids are the secret to make you feel fit again. This soup contains lots of vitamins, carbs, protein: everything important for a healthy meal. Sometimes i completely forget how important it is to look after my body but especially now, as the cold time of the year begins, this soup warms me up completely and gives me so much energy. Always remember: Wrong diet: medicine is of no use, right diet: medicine is of no need.

​Serves 6:

200g peas

200g spinach

1 medium zucchini

1 tsp chopped ginger

2 potatoes

1 Brokkoli

1l vegetable broth

1 bunch of basil

2 tbsp vegan creme fraiche

you can add some toppings like seeds, nuts or roasted mushrooms.

Chop the zucchini, brokkoli and potatoes. Put everything except the creme fraiche in a big pot and boil it up. After simmering for 15-20 minutes you can mix it using a blender. Add the creme fraiche and stir it in. In a final step you boil everything up again and than you are ready to serve. I really like some roasted mushrooms, roasted kale, seeds or nuts to top this soup and spice it up a bit. I wish everyone lots of fun making this really easy and cleansing soup. Enjoy!
