Brezenknödel / Pretzel Dumplings | vegan

Today the Oktoberfest in Munich started and as i am a Bavarian i sometimes really miss some of the traditional food in my vegan diet. But luckily there are dishes that can be veganised. So i created these very delicious pretzel dumplings for my bavarian cravings. This recipe is very easy and if you have left over dumpings you can add some onions, oil and vinegar to create a salad. Enjoy :)

For ~10 Dumplings you need:
3 soft pretzels
5 rolls 2 onions 2 tbsp soy flour 2 tbsp wheat flour 2 tbsp chopped parsley some nutmeg 500ml soy milk
(i like it best with some mushroom sauce)
> Chop or pull the rolls and pretzels to small bits. Fry the chopped onions, mix everything together and it let sit for about 15 minutes. Boil some water. With wet hands you can form the dough into balls. Put them into the boiling water and let it steep for another 10-15 minutes.
Instead of boiling you can also put the dough into a baking dish, cover with aluminium foil and bake it for 10-15 minutes at 180° celcius. It´s a very creative way to serve it and i really like the crust it gets. Bon Appetit!
