Bavarian Pancake Soup | Souptember | vegan

As a child i went hiking in the alps with my sister and grandparents every summer. I remember the smell of the delicious pancake soups served at the cottages. This recipe is my favourite vegan version. Even my non-vegan family members like it.

Serves ~4

1,1 l oatmilk

500g flour

4tbsp soy flour

vegan butter for the pan

1,5 l vegetable broth

vegetables for the soup

(eg leek or carrots)

Mix the flour, soy flour and oatmilk for the dough. It works best with a non-stick frying pan. When the pancakes are finished cut them into stripes.

My favourite vegetables to add to the soup are leek and carrots but you can choose whatever you like.

The pancakes are also good as a sweet breakfast filled with jam or chocolate cream and served with fresh fruits.
