Red Lentil Soup | Souptember | vegan

2 chopped onions

1 tbsp minced ginger

1 tbsp red curry paste

1 litre (4cups) vegetable broth

1 can (400ml) coconut milk

500g canned tomatoes

1 ¾ cups (200g) red lentils

400g chopped carrots

Gently roast the onions with the ginger in a frying pan until the onions are glazed. Add all the other ingredients and boil it up. Let it simmer for about 25minutes. Mix it up and enjoy!

Fun Facts about Red Lentils

  • Red lentils need less cooking time in comparison with other kind of lentils

  • They are mostly common in Turkey and India

  • Their actual colour is brown or purple, peeled they are red and cooked they turn orange/yellow

  • They contain lots of Folic Acids (Vitamin B9) which is good for pregnancy because it prevents abnormity for unborn babies

  • They have lots of protein (25-30%)

  • They are gluten free

  • There are 70 different kinds of lentils
